Le Merveilleux Voyage, the French equivalent of Soarin , in a non Disney parc (Futuroscope, in central France) inaugurated December 17th 2016, is a big hit. It's a pity that Disneyland Paris didn't adapt Soarin in the Walt Disney Studios
Obviously the answer depends on whether it is your first trip, whether you have kids, and/or whether you have more than one day, but here goes my answer:
"Must-do" rides: Test Track, Soarin', Spaceship Earth, Living with the Land, The Seas with Nimo and Friends, Journey into Imagination with Figment, Mission Space (I can do green but not orange), Ellen's Energy Adventure, Gran Fiesta Tour
"Must-do" shows: IllumiNations, The American Adventure, O' Canada, Reflections of China, and Impressions de France
"Must-do" restaurants: ALL but our favorites are Beirgarten, Rose & Crown, Le Cellier, Restaurant Marrakesh, Monsieur Paul, Yorkshire County Fish Shop

Until 2008 eat Apfelstrudeln in the German pavilion. Last time quality has gone down. So we prefer an apple pie in the American Adventure pavilion. And don't forget to go in the store of this pavilion to buy an American souvenir to bring back to your foreign country. Exampe : in November 2014 we bought "America, the making of a nation, Little Brown and Company editions", 19,99 $, a beautiful book but printed in China mainland. So it is now in the world economics.

LOL, DW prefers Creme Brulee (gluten free)from the France pavilion. We go there every time. I go there for champagne flights. We don't do Rose and Crown bar because its the worst service in the park.

I will have to keep that in mind. We always do Rose & Crown Dining Room and not Rose & Crown Pub.

I agree with Dean.....the pub has very slow, slow service unless you arrive when they open and get a coveted bar stool seat.....they tend to focus only on guests seated at the bar and it's extremely hard to squeeze in there to get a drink....
second star to the right and straight on till morning
Our list includes: Soarin', Spaceship Earth, Mission Space, Living with the Land, Test Track, for the rides then Rose & Crown for drinks and music, Tequila Cave, Germany for the Schoffelhoffer beer, Candlelight Processional (when there at Christmas) and Illuminations. Oh, and the Buffalo/Blue Cheese popcorn sold at the cart near Test Track!
What, in your opinion, is on your "Must Do" List while visiting EPCOT?
Our must-do's at Epcot are Test Track, Soarin', Living With the Land, Karamell-Kuche and Illuminations! Oh, also had a pineapple softserve with macadamia rum that made the list!

EPCOT.....our favorite park for the food and wine festival. We love sampling the different foods all the way around the world. Mostly we have problems doing this because Disney always offers free dinning plans. I then insist we don't waste a free meal or any meal for that matter. Grew up being forced to eat what was in front of me or I got nothing else. That is still imbedded in my mind, thou I did not force my children, or didn't force them all the time. I agree with Rose and Crown, went in a long time ago and had to interrupt the bartender to get a drink, never went back. Favorite is the spicy kimchee dog, it was originally at Korea then went to the stand between China and Germany, forgot the name of it and it's only offered during the food and wine festival. Another favorite is the Cheddar soup in Canada, they need to cut down on the salt so I can have more of it.
