I always watched IllumiNations right between Mexico and Norwegian pavillions, but this time I thought I could try a new spot, so I have two ideas that I've read at some point between 2014 and now.
First option is to have dinner at 8pm at La cantina de San Angel. But I'm not really sure if that restaurant has that many tables with a proper view.
The other option is to go to the upper part of the Canada Pavillion and to watch the fireworks from that spot.
Ok I have no clue where you even see the outside from SAN Angels but ok....isn't that inside Mexico downstairs or do you mean the one outside on the waters edge?.I like Rose and Crown patio for seating through dinner to watch the fireworks personally.....or the bridge between Mexico and beyond....or the other side entering between England and France.....it often depends on where I am staying.....if I'm at Beach Club....I watch over by England/France because I can exit out through the back way and walk.....if I'm there for the day I actually like at the center spot where World Showcase begins so I can leave straight down to the ball and get to my truck before the crowds spill out.....

There are a lot of great places to watch Illuminations from, in the past we always sat over between Germany and China, I would have a bratwurst with sauerkraut and a pint of Becks beer. Becks is no longer offered. Also they had benches near Germany, now they are reserved for special occasions.
The quick serve area at Rose and Crown with outside tables is not available 1 hour prior to the show. People take chairs and save them while the rest of their group are out in world showcase. One night I bought the fish and chips and had no place to sit, there were plenty of tables just no chairs, I asked several people to use a chair while I ate, the answer was no they are saved, I didn't want the chair only to eat my dinner, I wasn't even staying for Illuminations that night, they would have gotten it back.
I have suggested to Disney to cement the chairs in the ground to prevent this from happening. If you go and the chairs are in cement, you know who suggested it.

He's right. Picture is from La Cantina de San Angel which is the outdoor Counter Service where I usually get Nachos and a Patron Lime Margarita on the rocks...mmmm. La Hacienda de San Angel is the Table service restaurant next door that has some window views. The San Angel Inn Restaurante is the Table Service inside the Mexico Pavillion. I eat there almost every trip. Coctel de Camaron (shrimp cocktail) and Enchiladas Verdes de Pollo all gluten free...alright now I'm hungry.

I have better things to do until then. DW and I usually wait til last 5 minutes then go between Mexico and Norway. Right where the musicians play. We're tall so don't need to be up front.

You can't reserve a table at La Cantina. They are just hard picnic tables.

We always seem to end up between Germany and Italy. We usually grab a sliced caramel apple or another sweet treat from Karamell Kuche and a drink and hang out nearby. Great view! The only downside may be that it is probably the farthest point from the main entrance. Not an issue for us as we enjoy strolling back to avoid some of the rush!

Same here... Last time I went there, I saw IllumiNations from that same spot. And after that, walked against the crowd to see frozen summer fireworks from the bridge in France... and then the way back was a very relaxed walk, no crowds, no rush!
The construction for Illuminations replacement has started, the yellow crane has finished it's job and was removed. These are two separate islands the crane was near China the other island is near Japan.
