Over the past few years, my kids have finally grown to love a larger variety of food including Sushi as much as I do. This has allowed us to try more restaurants etc.
We have tried a few places for sushi at WDW- Katsura Grill ( not bad at all, not alot of options but sort of unique quick service sushi) , Teppan Edo - more of a hibachi restaurant but they do have a good sushi appetizer, and Tokyo Dining - very good selection, terrific service. Morimoto at Disney Springs - very good, nice service too.
But hands down, our experience at Kimonos at the Swan resort was the best for sushi. Its a very small place, quaint, quiet , well decorated and sort of off the regular path. But if you have the time and can make it over to the Swan its worth the visit. Their selection of sushi is very plentiful and the quality is tremendous. The service was also top notch. You are immersed to the point you don't even realize where you are. We have been there 4 times now and have not had a bad experience yet. One night we were there when they were doing Karaoke which was humorous.
I suggest reservations (you have to call close to the day of your visit, they don't do ADRs)
It does not take the dining plan, so that is one draw-back. otherwise if you do like sushi in the traditional fashion, Kimonos is the place for you
Overall I have not had any bad experience with sushi at WDW, all of the options are pretty good.
My Ranking (Based on the sushi and the experience): 1. Kimonos 2. Morimoto 3. Tokyo Dining 4. Katsura
All of the top 3 are terrific. But even #4 is a nice meal for a quick service.
I won't add Teppan Edo because its not the main reason people eat there. Though their sushi appetizers are very good

I'll have to let the kids know. They did Morimotos on our March trip and loved it. I don't really care for sushi. I like Steak and Lobster. Shula's steakhouse is on my list for later this summer.

We've eaten at Shula's in NYC. The lobster bisque is heaven! My family loves the cowboy steaks...I prefer filet mignon. I am not a fan of sushi, but the kids are. I am anxious to try Morimoto.

My wife and I love sushi too but we haven't tried any of those that you have mentioned. Did you ever try Kona Island at the Polynesian Village? We had sushi there in 2011 and totally loved. It was a lot of food for the price but back then, it was on the dining plan which it appears not to be any more. If I remember correctly, we got the Kona Combo Plate and Salmon Roll which were both very tasty.
Our thing is we typically don't venture to the Swan or Dolphin. I have never eaten at any of their restaurants but maybe we should look at them a couple of times.

A lot of people overlook the Swan and Dolphin restaurants. Unless you stay at Them or at Boardwalk, Yacht club, or Beach club, you don't realize how short of a walk it is. Just like walking to Epcot from HS. The walk is actually faster than taking the boats.

Actually yes I forgot about that place, I had some great sushi there too- ( Kona)
