Here are the latest refurbishments that I was able to find (as of August 6, 2018):

Magic Kingdom
Monorail - The monorail is under refurbishment until further notice and may have modified service or routes depending on park hours. You should check on the day of travel the best option to use. Alternative transportation options may be available.

Stitch's Great Escape - it is now a seasonal attraction.

Liberty Square Riverboat - 1/8/2018 - 8/30/2018

Walt Disney World Railroad - The Walt Disney World Railroad will cease running and will sit "in residence" at its Main Street Station while work progresses on the new Tron coaster coming to Tomorrowland in 2021. This will give guests the chance to have an up-close look at the railroad and take advantage of some unique photo opportunities.

Tomorrowland Speedway will be closed for the Tron construction, most likely the first half of 2019.

Epcot
Kringla Bakeri og Kafe (Norway Pavilion) - The refurbishment will enlarge the space and create more seating. While the Bakeri is closed, visit the temporary kiosk called Midnattssol which will sell the spot's most popular items (including School Bread).   Items are considered a snack on the Disney Dining plan.   2/4/2018 - TBA

Disney's Animal Kingdom Lodge - Jambo House- starting 2/12/2018 pilot program where transactions will be handled with cash free option. All purchases and service will accept MagicBands, credit cards, debit cards, Disney Gift Cards, Disney Rewards Redemption Cards, Apple Pay, Samsung Pay, or Google Pay. Children's Activity Center closed as of 8/1/2018. Jambo House- room refurbishment- Mid 8/2018- Fall 2019. Uzima Springs Pool- Jambo House, Uzima Springs Pool and Uzima Springs Pool Bar closed 9/1/2018- Winter 2018. During this time Samawati Springs Pool and Maji Pool Bar in Kidani Village will be available. A shuttle will be provide to and from the Animal Kingdom Villas to Jambo house. Guests may see or hear construction butnoise should not be heard betweek dusk and 9 AM.

All-Star Movies - Room refurbishment- Late February- Early 2019. Guests may see or hear construction.

Art of Animation Resort - Walt Disney World has embarked on creating a new transportation system, Disney Skyliner, which will give Guests a bird's-eye view of Walt Disney World Resort while traveling via gondolas. During this time construction noise may be seen or heard throughout the resort, but noise should not be heard from Guest rooms between dusk and 9am.

Disney's Beach Club Resort - Children's Activity Center closed as of 8/1/2018. Ongoing outside refurbishment projects. There will be no noise between dusk and 9 AM.

Disney's BoardWalk Resort - Ongoing refurbishment projects. There will be no noise between dusk and 9 AM. Children's Activity Center closed as of 8/1/2018.

Disney's BoardWalk Villas - The resort is currently undergoing some refurbishment projects. The Resort will be in full operation with all amenities available. It is possible that construction may be seen or heard, but noise should not be heard from Guest rooms between dusk and 9 AM.

Disney's Caribbean Beach Resort - The resort will be undergoing many refurbishment projects for 2 years. Several villages within the resort will not be available. Old Port Royale Food Court, Shutters at Old Port Royale, Cabana Pool Bar and Calypso Trading Post will be closed starting 5/2017- through Fall 2018. There will be a variety of dining options available for breakfast, lunch and dinner. Centertown will serve breakfast and dinner and a selection of grab-and-go meals will be conveniently available for purchase in three island markets located in the Aruba, Jamaica and Martinique regions of the Resort. Walt Disney World has embarked on creating a new transportation system, Disney Skyliner, which will give Guests a bird's-eye view of Walt Disney World Resort while traveling via gondolas. Disney's Coronado Springs Resort - The resort will be undergoing many refurbishment projects starting 1/2017 for two years. Hard Good refurbishment through 2019. Siestas Cantina, La Marina, Dig Site Spa, Lost City of Cibola Kiddie Pool, Lost City of Cibola Pool, Jaguar Slide and Iguana closed 9/4/2018- 12/12/2018. Siestas Cantina will remain closed until 1/5/2019. Pepper Market will be undergoing minor refurbishment work now through Summer 2019.

Disney's Old Key West - 8/1/2017- Spring 2019- Guests may see or hear work in progress and certain pathways may be unavailable. During this time, the Resort will be in full operation with all amenities available including dining and merchandise locations, pools, and recreation activities. It is possible that construction may be seen or heard, but noise should not be heard from Guest rooms between dusk and 9:00 AM.

Disney's Polynesian Village Resort - Children's Activity Center closed as of 8/1/2018

Disney's Pop Century Resort - Room Refurbishments 2/4/2017- Summer 2018, Walt Disney World has embarked on creating a new transportation system, Disney Skyliner, which will give Guests a bird's-eye view of Walt Disney World Resort while traveling via gondolas. During this time construction noise may be seen or heard throughout the resort, but noise should not be heard from Guest rooms between dusk and 9am.

Disney Port Orleans French Quarter - Room refurbishments through Summer 2018

Disney's Port Orleans Riverside - One of the Alligator Bayou leisure pools will be closed for refurbishment, but Ol' Man Island (the feature pool) and four other leisure pools will be available. Guests may hear or see construction, but noise will not take place between dusk and 9:00 a.m. Rooms will be refurbished from 7/2018 through early 2019. All dining and merchandise locations will be operating during the refurbishments.

Disney's Wilderness Lodge - Cub's Den (Children's Activity Center) closed permanently.

Disney's Yacht Club Resort - Expansion work on the Convention Center 8/4/2016 -Winter 2018. Guests may see work or hear the work in progress and certain pathways may be unavailable. Work will be conducted 9 AM to 9 PM. Children's Activity Center closed as of 8/1/2018. There will be additional bus transportation operating to and from Hollywood Studios and Epcot.


Theme Park Capacity Closure Information
During extremely busy times of the year such as Easter, Thanksgiving, Christmas, and New Year's, the theme parks at Walt Disney World sometimes close in phases as they reach their capacity.


Phase A Closure

Guests with one-day, single-park tickets will not be allowed to enter the theme park unless they are:

• Premium and/or Annual Passholders including those with WDW Premier Passports
  
• Walt Disney World Resort guests including guests staying at one of the following:
  
  • The Four Seasons Resort
    
  • Walt Disney World Swan and Dolphin
    
  • Shades of Green
    
  • Select Disney Springs hotels arriving by bus (Best Western Lake Buena Vista Resort Hotel, The Buena Vista Palace, DoubleTree Suites by Hilton Hotel, B Resort, Wyndham Lake Buena Vista Resort, Hilton)

Phase 4 Closure

Closed to ALL guests

This just announced:

1) Peter Pan's Flight at the Magic Kingdom will be closing for refurbishment beginning on January 7, 2019 and runs through to February 1, 2018 with reopening to guests on February 2 2019.

2) The Tomorrowland Speedway will be closing early in the new year to begin the re-routing of track to make way for the addition of the Tron coaster. Current plans call for the ride to close on January 2, 2019 through to May 17, 2019 with a reopening to guests on May 18, 2019. Disney has said it will open as the same ride, but with adjusted track

3) The Walt Disney World Railroad will also temporarily take up residence at the Main Street Station starting in December 2018, pausing its grand-circle tours of Magic Kingdom Park. During this time, you will be able to get an up-close look at the railroad and take advantage of one-of-a-kind photo opportunities.

This just announced in the last day or two regarding Spaceship Earth:

Disney is moving forward with a complete overhaul of the Epcot park entrance and central area of Future World as part of “Project Gamma”; this is what Walt Disney Imagineering is calling it. Included in this project will be the overhaul of Spaceship Earth, as well as a lot of new and interesting changes for the main thoroughfare of the park that are still very much in development.

The overhaul of Spaceship Earth will be so involved that it will force the ride to be closed from early 2020 until the second half of 2022; in time to Epcot's 40th Anniversary. Why would a project like this take so long? Well, needless to say, there’s a lot to it. Spaceship Earth is aging and it is about time for the entire ride track to be overhauled. As well, Disney will use this opportunity to extend the length of the attraction with new load and unload areas that may not be in the same places that they are now. In doing so, the current post-show building that houses Project Tomorrow will be removed and an entirely new structure built. It is quite the project in scale and scope.

The ride inside of Spaceship Earth will see a refreshing of all scenes leading up to the Industrial Revolution portion (where newspapers are being printed as a young boy sells them steps away), with changes on a grand scale coming to every scene following that, all the way to the end of the ride. There are also rumors that the scene in the dome at the top of the attraction where guests look back at Earth from space will be drastically redesigned and re-imagined utilizing the latest in projection mapping technologies. As far as the exterior of Spaceship Earth, they will indeed be working on setting-up projection mapping there as well, covering the entire geodesic sphere with projections during the ride’s lengthy downtime and the redevelopment of the area around it. It should make for quite the nighttime display.

I noticed just last week that they removed the skeleton of the mermaid in MK Pirates of the Caribbean ride. It used to be just before the drop.
